Beef Roll

Ingredients

Directions

The book says “a slow oven”. The 300°F (150°C) in the steps is the modern equivalent, not the book's own figure.

Prepare

  1. Preheat the oven to 300°F (150°C).

  2. In a large bowl, mix the ground beef, bread crumbs, eggs, milk, butter, salt, and pepper until well combined.

  3. Transfer the mixture to a baking dish or tin pan that can accommodate a plate on top.

  4. Place a heavy iron or weight on top of the mixture to press it down.

Bake and finish

  1. Bake for 2.5 hours, keeping the plate and iron on until done.

  2. Once cooked, remove the plate and iron, and leave the roll in the oven for a few more minutes to brown.

  3. Wrap the roll in a cloth to keep it soft.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Ground beef
Forms the main body of the roll and sets firm as it cooks.
Bread crumbs
Absorb liquid and help give the roll a tender, sliceable structure.
Eggs
Bind the mixture and set during baking to hold the roll together.
Milk
Adds moisture so the roll stays juicy rather than dry.
Butter
Adds fat for richness and a softer, more tender texture.

The step that matters

Pressing the roll under a weight while baking. The weight keeps the mixture dense and compact so it holds its shape when sliced. Removing the weight too early can leave a loose, crumbly texture.

“What each ingredient does” and “The step that matters” were written by Claude from this recipe’s own method and reviewed in samples by CompKitchen.
