Why it works: Pepper and sage match in chemistry and in kitchens. They rank in the top 3% of all ingredient pairs, and cooks put them together in 5,388 recipes. Both carry beta-phellandrene, which smells minty, terpene. The science ↓

Beef Dumplings

Ingredients

Directions

Prepare the filling

  1. Boil the marrow bone or piece of beef with salt until the juice is extracted, then remove from pot.

  2. Cut the crusts off the stale bread and moisten with the broth, using the fat that has gathered on top.

  3. Add the rest of the bread, crumbed fine, along with salt, pepper, cinnamon, sage, and enough broth to achieve a stuffing consistency.

Shape and cook

  1. Mix the paste as you would for apple dumplings.

  2. Cut the paste into squares.

  3. Fill the squares with the prepared mixture.

  4. Shape into rounds.

  5. Place in the remaining boiling broth.

  6. Boil until cooked through.

What each ingredient does

Stale bread
Absorbs the broth and gives the filling a soft, stuffing-like body.
Broth from boiling beef
Moistens the bread and binds the filling while adding savory flavor.
Beef marrow bone or beef
Releases juice and fat that flavor the broth and the filling.
Sage
Adds a savory, herbal aroma to the filling.
Cinnamon
Adds warm, aromatic spice to the filling.

The step that matters

Enough broth in the filling. Stale bread soaks up liquid, so the filling needs enough broth to reach a stuffing consistency. Too dry, it crumbles when shaped; too wet, it bursts through the paste and turns the dumplings soggy.

Swap the cinnamon

How well each one fits the dish's main ingredients (beef, bread, pepper, sage):

Fit is the average pairing score against beef, bread, pepper, sage. Candidates are from the same food group and used in at least 100 recipes.
