Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Rump of beef
Provides the meat that becomes tender during the long stew.
Flour
Coats the meat for browning and later thickens the sauce.
Small beer
Adds liquid and a mildly sour, malty flavour to the stew.
Carrots
Add natural sweetness and body to the stewed sauce.
Good gravy
Adds savoury depth and richness to the sauce.
Ketchup
Adds tangy, savoury sweetness to the finished sauce.

The step that matters

Fry the floured meat until browned. Browning the floured surface drives Maillard reactions that create deep, savoury flavour. Pale meat gives a flat sauce, so brown it well before adding liquid.

Swap the lemon

How well each one fits the dish's main ingredients (beef, flour, beer, carrot, onion, clove, pepper):

  1. Limefits better
  2. Avocadofits better
  3. Cherryfits about as well
  4. Lemonthe original

Fit is the average pairing score against beef, flour, beer, carrot, onion, clove, pepper. Candidates are from the same food group and used in at least 100 recipes.
