Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Make the base

  1. Beat the yolks of 8 eggs with 1 tablespoon of water, salt, sugar, and lemon juice.

  2. Fry the egg mixture in a pan until cooked, then transfer to a dish.

Top and bake

  1. Whip the 4 reserved egg whites to a froth with sugar.

  2. Spread the whipped egg whites over the fried eggs.

  3. Bake in a preheated oven at 350°F (175°C) for a few minutes.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Yolks set into the base while whipped whites form a light, airy topping.
Egg whites
Whipped into a foam that gives the top its light, puffed, soufflé-like texture.
Lemon juice
Adds acidity that brightens the flavor and helps stabilize the whipped egg whites.

The step that matters

Whipping the egg whites to a froth. Whites must be beaten until foamy and holding shape so the topping stays airy; under-whipped or greasy whites will deflate and fail to puff in the oven.

Swap the lemon

How well each one fits the dish's main ingredients (egg, sugar):

  1. Vanillafits better
  2. Raisinfits about as well
  3. Lemonthe original
  4. Datesfits less well

Fit is the average pairing score against egg, sugar. Candidates are from the same food group and used in at least 100 recipes.
