Ingredients

Directions

The book says “a quick oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Prepare

  1. Preheat the oven to 400°F (200°C).

  2. In a bowl, mix the beef, egg yolk, parsley, butter, bread crumbs, lemon juice, salt, black pepper, and onion juice until well combined.

  3. Form the mixture into a roll about 6 inches long and wrap it in buttered paper.

  4. Place the wrapped loaf in a baking pan.

Bake and serve

  1. Bake for about 30 minutes, basting every 5 minutes with melted butter mixed with boiling water.

  2. Serve with brown mushroom sauce poured around it.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Beef
Forms the main body of the loaf and provides its savory, meaty flavor.
Egg yolk
Binds the mixture so the loaf holds its shape when sliced.
Bread crumbs
Absorb juices and help keep the loaf tender and moist.
Butter
Adds richness and moisture, and the basting butter promotes gentle browning.

The step that matters

Basting the loaf with melted butter and boiling water. Regular basting keeps the surface moist and helps it brown evenly. Without it, the outside of the lean meat can dry out during the 30-minute bake.

Swap the onion

How well each one fits the dish's main ingredients (beef, egg, parsley, butter, bread, lemon, pepper):
