Ingredients

Directions

The book gives no oven temperature. The 300°F (150°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Beat the eggs in a bowl until well mixed.

  2. Add the milk or cream, salt, and pepper; mix until combined.

  3. Butter ordinary custard cups and pour the egg mixture into them.

Bake and serve

  1. Place the cups in a pan of boiling water.

  2. Bake in a 300°F (150°C) oven until the timbales are set in the center.

  3. Turn the timbales out onto a hot dish and pour cream sauce around them.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Set into a firm, sliceable custard as they cook, giving the timbales their structure.
Milk or cream
Adds moisture and richness, keeping the custard tender rather than rubbery.

The step that matters

Bake in a water bath. The cups sit in boiling water, which shields the egg mixture from direct heat. Egg proteins set gently this way, so the custard stays smooth instead of curdling or turning grainy.
