Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Chop the egg whites finely and press the yolks through a vegetable press.

Assemble

  1. In buttered scallop shells, layer chopped ham, then chopped egg whites.

  2. Pour some cream sauce over the layers.

  3. Add another layer of ham and a layer of sifted yolks.

  4. Cover with more cream sauce and sprinkle with moistened bread crumbs.

Bake

  1. Bake in a 400°F (200°C) oven until golden brown.

What each ingredient does

Hard-boiled eggs
Provide the main body of the dish, with whites chopped and yolks pressed to a fine texture.
Cream sauce
Adds moisture and richness so the layers stay creamy rather than dry while baking.
Boiled ham
Contributes savory, salty flavor and chewy texture between the egg layers.
Bread crumbs
Form a crisp, golden topping that browns in the oven.
Butter
Adds fat that helps the crumb topping brown and gives a rich flavor.

The step that matters

Bake until golden brown. The topping needs enough heat to brown without drying the cream sauce underneath. Watching colour lets you stop before the sauce splits or the eggs toughen.
