Cream Filling

Oven, in the book's wordsA moderate oven

Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

  1. Sift the flour, then mix with sugar and butter, cutting the butter into the flour until no lumps remain.

  2. Add the beaten eggs and stir to form a smooth paste.

  3. Divide the dough into halves, shape into balls, and flatten each on a board.

  4. Roll out each piece until it is large enough to fit a layer cake tin with a ½ inch border.

  5. Trim the border and place the center in the tin, pressing it to the edges.

  6. Moisten the edges with a pastry brush dipped in egg, then attach the trimmed border.

  7. Pierce the crust with a fork and bake in a 350°F (175°C) oven until golden brown.

  8. While baking, heat the milk in a double boiler.

  9. Beat the yolks until light, then mix in sugar and flour, and stir into the boiling milk until thick.

  10. Remove from heat, add vanilla, and let cool.
