Pulled Sugar Taffy

Ingredients

Directions

Make the syrup

  1. In a saucepan, combine water, vinegar, and brown sugar.

  2. Stir until it begins to bubble, then boil without stirring until it reaches the soft ball stage or spins a thread.

  3. Add the butter and continue cooking until it becomes brittle when dropped into ice water.

Pull and cut

  1. Pour the mixture onto a well-greased pie tin; do not scrape the saucepan.

  2. Once cool enough to handle, add the flavoring and pull the taffy until it is light colored and stiff.

  3. Cut into one-inch pieces.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Brown sugar
Provides the bulk of the sweetness and the caramel flavor of the taffy.
Butter
Adds fat that softens the texture and gives the taffy a smoother bite.
Vinegar
Acid that helps prevent sugar crystals from forming, keeping the taffy smooth.

The step that matters

Boil without stirring until the soft ball or thread stage. Sugar syrup must reach the correct concentration to set to the right firmness. Stirring can trigger premature crystallization, leaving the taffy grainy, and undershooting the temperature leaves it too soft. Scraping the pan can also reintroduce crystals.

Swap the vanilla

How well each one fits the dish's main ingredients (sugar, vinegar, butter):

  1. Vanillathe original
  2. Strawberryfits about as well
  3. Apricotfits about as well
  4. Peachfits about as well

Fit is the average pairing score against sugar, vinegar, butter. Candidates are from the same food group and used in at least 100 recipes.
