Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Egg
Yolk and whipped white give the drink its body, foam and creamy texture.
Rich milk
Provides the liquid base and creamy richness of the drink.
Sugar
Sweetens the milk and balances the richness of the yolk.

The step that matters

Beating the white until very stiff. Egg white only holds air well when beaten to stiff peaks; underbeaten white collapses and leaves the drink thin and flat. Folding gently afterward keeps the trapped air in place.

Swap the nutmeg

How well each one fits the dish's main ingredients (milk, sugar, egg, wine):

  1. Cinnamonfits better
  2. Nutmegthe original
  3. Gingerfits less well
  4. Tarragonfits less well

Fit is the average pairing score against milk, sugar, egg, wine. Candidates are from the same food group and used in at least 100 recipes.
