What each ingredient does

Quinces
Provide natural pectin for setting and the fragrant flavour of the honey.
Sugar
Adds sweetness and, as the syrup reduces, helps the mixture thicken.

The step that matters

Grate the quinces quickly. Quince flesh browns quickly when exposed to air, so grating and adding it to the syrup without delay keeps the color lighter.
