What each ingredient does

Turkey bones (in the method)
Release flavour and body into the water as they simmer.
Onion
Adds savoury sweetness and aroma to the broth.
Turnip
Adds mild sweetness and body as it softens in the broth.
Rice
Thickens the soup slightly as its starch releases during cooking.
Flour or boiled rice
Thickens the soup at the end, giving it a fuller texture.
