Veal Pie

Ingredients

Directions

The book says “a quick oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Prepare the crust

  1. Preheat the oven to 400°F (200°C).

  2. Roll out the plain pastry and cover a deep pie plate with it.

  3. Bake the crust until golden brown.

Fill and bake

  1. Layer the parboiled veal bits evenly on the crust.

  2. Add the butter pieces, salt, pepper, flour, and broth over the meat.

  3. Roll out a richer top crust and place it over the filling.

  4. Bake immediately in the preheated oven.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Parboiled veal
Forms the savory, meaty body of the filling.
Butter
Adds richness and fat that carries flavor and helps the filling taste rounded.
All-purpose flour
Thickens the broth into a binding sauce around the meat.
Broth from boiled veal
Supplies moisture and savory flavor that keeps the filling from drying out.

The step that matters

Bake immediately in the preheated oven. Flour in the filling starts to thicken the liquid as soon as it is mixed. Baking right away keeps the sauce from thickening too early and helps the crust cook before the filling soaks into it.
