What each ingredient does

Tomatoes
Provide the main body, flavour and bulk of the sauce once stewed and sieved.
Gravy or broth
Adds moisture and liquid so the tomatoes can soften and form a smooth sauce.

The step that matters

Pass the mixture through a sieve. Stewed tomatoes contain skins and pulp that stay coarse unless strained. Pressing the mixture through a sieve removes these solids and gives a smooth, even texture.

Swap the tomato

How well each one fits the dish's main ingredients (pepper, butter):

  1. Capsicumfits better
  2. Potatofits better
  3. Carrotfits about as well
  4. Tomatothe original

Fit is the average pairing score against pepper, butter. Candidates are from the same food group and used in at least 100 recipes.
