What each ingredient does

Raspberries
Provide the fruit body, flavour and natural pectin that gives the jam its structure.
Sugar
Sweetens the jam and draws water out of the fruit, helping it thicken and keep.

The step that matters

Scald the mixture together. Heating the raspberries and sugar together dissolves the sugar and softens the fruit so juice releases and mixes evenly. Under-heating leaves the jam runny and unevenly set.
