Why it works: Cucumber and horseradish match in chemistry and in kitchens. They rank in the top 2% of all ingredient pairs, and cooks put them together in 640 recipes. Both carry 2-isopropyl-3-methoxypyrazine, which smells earthy, pea. The science ↓

Ingredients

Directions

  1. Cover the cucumbers with brine made of water and salt, strong enough to float an egg, for 24 hours.

  2. Wash the cucumbers in clear water and dry them.

  3. Place some cucumbers in a jar and add ginger, horseradish, and pepper pods.

  4. Add more cucumbers and spices until the jar is full.

  5. Boil cider vinegar and pour it over the cucumbers.

  6. Cover the jar tightly.
