Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point. The book gives no cooking times either; the times in the steps were added in transcription, so check for doneness rather than trusting the clock.

Prepare the batter

  1. Preheat the oven to 350°F (175°C).

  2. Cream the butter and sugar together until light and fluffy.

  3. In a separate bowl, beat the yolks of 4 eggs and mix with 1 cup of sugar and 1 cup of sour cream.

  4. Add 1 teaspoon of baking powder and mix well.

  5. Grind the blanched almonds and fold them into the mixture.

  6. In another bowl, beat the egg whites until stiff peaks form, then gently fold them into the batter.

Bake

  1. Pour the batter into prepared cake pans and bake for about 30-35 minutes or until a toothpick comes out clean.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Egg yolks enrich and bind the batter, while whipped whites add lift and a light crumb.
Butter
Creamed with sugar, it traps air and adds richness and a tender texture.
Flour
Provides the structure that holds the cake together as it bakes.
Baking powder
Releases gas during baking, helping the cake rise.
Blanched almonds
Ground into the batter, they add nutty flavour and moistness.
Sour cream
Adds moisture and a slight acidity that keeps the crumb tender.

The step that matters

Folding in the beaten egg whites. Whites hold air only while stiff; overmixing or stirring vigorously deflates them, leaving a denser cake. Fold gently so the batter keeps its lift.
