Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Beaten whites and yolks give the custard filling its richness and body as it sets.
Sour cream or milk
Provides moisture and a tangy base for the custard filling.
Blanched almonds
Add fat, flavor and a fine texture to the filling.
Sugar
Sweetens the filling and helps stabilise the beaten egg whites.

The step that matters

Combine all ingredients cold and spread between the layers of cake.. The filling must stay cold so the egg-based custard thickens gently rather than curdling or becoming runny. Spreading it while cold also keeps the layers firm enough to hold their shape.

Swap the almond

How well each one fits the dish's main ingredients (cream, vanilla, egg, sugar):

  1. Almondthe original
  2. Chestnutfits about as well
  3. Hazelnutfits about as well
  4. Macadamia nutfits less well

Fit is the average pairing score against cream, vanilla, egg, sugar. Candidates are from the same food group and used in at least 100 recipes.
