Nut Cake

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point. The book gives no cooking times either; the times in the steps were added in transcription, so check for doneness rather than trusting the clock.

Prepare

  1. Preheat the oven to 350°F (175°C).

  2. Cream together the sugar and butter until light and fluffy.

  3. Add the eggs and mix well.

  4. Stir in the sour milk.

  5. In a separate bowl, combine the flour, baking soda, and cream of tartar.

Make the batter

  1. Gradually add the dry ingredients to the wet mixture, mixing until just combined.

  2. Fold in the nut meats.

Bake

  1. Pour the batter into a greased cake pan and bake for 30-40 minutes or until a toothpick comes out clean.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Flour
Provides the structure that sets the cake's crumb as the batter bakes.
Butter
Adds fat that makes the cake tender and rich in flavor.
Sugar
Sweetens the cake and helps it brown while creaming adds air to the batter.
Eggs
Bind the batter and add structure and moisture to the crumb.
Sour milk
Adds moisture and acidity that reacts with the leavening to help the cake rise.
Baking soda
Reacts with the acidic sour milk to release gas that lifts the batter.

The step that matters

Mixing the dry ingredients into the wet mixture. Mixing only until combined keeps gluten development low, so the cake stays tender instead of tough. Overmixing also knocks out the gas from the leavening, reducing rise.

“What each ingredient does” and “The step that matters” were written by Claude from this recipe’s own method and reviewed in samples by CompKitchen.
