Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

White sugar
Forms the bulk of the candy and sets firm as the syrup cools.
Vinegar
Adds acidity that helps prevent the sugar from crystallising into a grainy texture.
Butter
Adds richness and a softer, smoother bite to the finished candy.

The step that matters

Do not stir while boiling. Stirring the syrup can encourage sugar crystals to form, which makes the candy grainy instead of smooth. Letting it boil undisturbed keeps the texture even.
