Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

  1. Melt butter in a pan.

  2. Add a little cream and Bechamel sauce to bind the mixture.

  3. Season to taste with coarse sea salt.

  4. Stir in grated Parmesan cheese.

  5. Fill the baked tartelette crusts with the mixture.

  6. Sprinkle chopped truffles on top.

  7. Add a few drops of liquid beef extract.

  8. Heat in the oven at 400°F (200°C) until warm.

  9. Serve on a napkin.
