Ingredients

Directions

The book says “a hot oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

  1. Pick out nice heads of mushrooms and wash them well.

  2. Dry the mushrooms and scoop out the black part.

  3. Fill the mushrooms with d'Uxelle stuffing.

  4. Strew breadcrumbs over the stuffed mushrooms.

  5. Place a small lump of butter on each mushroom.

  6. Arrange them in a buttered baking dish.

  7. Cook in a brisk oven at 400°F (200°C) for 10 to 15 minutes, depending on their size.

  8. Serve with Madeira sauce.
