Oignons Farcis — Stuffed Onions

Oven, in the book's wordsA moderate oven

Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

  1. Peel the onions, being careful not to cut the root too close.

  2. Scoop out the insides of the onions.

  3. Parboil the onions in salted water for 10 minutes, then drain.

  4. Fill the onions with stuffing as explained for Stuffed Cucumbers.

  5. Line a pan with sliced carrots, onions, and fat ham.

  6. Add a bundle of herbs and place the onions in the pan.

  7. Cover each onion with a thin slice of fat pork.

  8. Moisten with good stock and cook for 1 hour at 350°F (175°C).
