Roast Beef

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Preheat the oven to 400°F (200°C).

  2. If desired, have the butcher remove the bones and roll the meat for a firmer fillet.

Roast

  1. Place the rib roast in the oven, ensuring it is not too close to the fire.

  2. If the roast has a lot of fat, cover it with clean white paper skewered over it to prevent overcooking.

  3. When the roast is nearly done, remove the paper and dredge the top with flour.

Serve

  1. Serve the roast with potatoes and other vegetables, garnished with thin curls of scraped horseradish.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Rib roast of beef
Provides the main cut of meat, whose fat and connective tissue add flavour and juiciness as it cooks.
Flour
Dredged over the top near the end, it helps form a browned crust on the surface.

The step that matters

Removing the paper when the roast is nearly done. The paper shields fatty roasts from overcooking. Removing it late lets the surface brown, and the flour dredge helps form a crust. Timing matters because the meat keeps cooking from residual heat.

Swap the horseradish

How well each one fits the dish's main ingredients (beef, flour, potato):

  1. Chivefits better
  2. Leekfits better
  3. Onionfits better
  4. Horseradishthe original

Fit is the average pairing score against beef, flour, potato. Candidates are from the same food group and used in at least 100 recipes.
