What each ingredient does

Veal
Main protein that becomes tender during long, slow stewing.
Flour
Coats the meat so it browns well and helps thicken the broth.
Butter
Fat for browning the meat, adding richness and flavor to the stew.
Veal broth
Liquid that gently cooks the meat and forms the base of the sauce.
Carrots
Add natural sweetness and body to the broth as they cook.
Onion
Adds savory depth and aroma to the broth as it simmers.

The step that matters

Browning the floured veal. Browning in hot butter creates flavorful Maillard browning on the surface. Crowding the pan or not getting a good color leaves the stew pale and less flavorful.

Swap the onion

How well each one fits the dish's main ingredients (veal, flour, butter, meat, carrot, parsley, pepper):

  1. Shallotfits better
  2. Parsnipfits better
  3. Leekfits better
  4. Onionthe original

Fit is the average pairing score against veal, flour, butter, meat, carrot, parsley, pepper. Candidates are from the same food group and used in at least 100 recipes.
