What each ingredient does

Fruit
Provides the bulk, flavor and natural pectin that help the jam set.
Sugar
Sweetens the jam and, as it concentrates, helps it set and keep.

The step that matters

Boil the mixture for half an hour, stirring well. Sugar and fruit must reduce until the jam reaches a thick, gel-setting concentration. Stirring prevents scorching on the bottom of the pan, which would give a burnt taste.
