Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the buns

  1. Mix caraway seeds into the bun dough.

  2. Form the dough into buns.

  3. Butter the insides of tart pans.

  4. Place one bun in each pan.

  5. Let the buns rise near the fire.

Ice and bake

  1. Once risen, ice the buns with beaten egg white.

  2. Sprinkle powdered sugar over the icing.

  3. Dissolve the powdered sugar with water using a brush.

  4. Bake for 10 minutes at 400°F (200°C).

What each ingredient does

Caraway seeds
Adds a warm, aromatic flavour to the dough.
Bun dough
Forms the soft, risen body of each bun.
Egg white (in the method)
Forms a glossy coating that helps the sugar icing set on the buns.
Powdered sugar
Adds sweetness and forms a crisp, sweet glaze on the baked buns.

The step that matters

Dissolve the powdered sugar with water using a brush. Sugar must be fully dissolved so the glaze spreads thinly and evenly; undissolved grains stay gritty and can burn during baking.
