Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Beef cheek or neck
Provides meat and collagen that enrich the liquid as it simmers into a rich gravy.
Flour
Coats the meat and helps thicken the gravy as it cooks.
Bread crust or breadcrumbs
Soaks up fat and foam and adds body to the gravy as it simmers.

The step that matters

Skimming the foam after boiling. Foam rising during the first boil contains impurities and fat that would cloud and dull the gravy's flavour, so removing it keeps the liquid clear and clean-tasting.

Swap the allspice

How well each one fits the dish's main ingredients (beef, flour, onion, pepper, bread):

  1. Garlicfits better
  2. Turmericfits better
  3. Parsleyfits better
  4. Allspicethe original

Fit is the average pairing score against beef, flour, onion, pepper, bread. Candidates are from the same food group and used in at least 100 recipes.
