Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Chicken
Gives the broth its main flavour and body as it simmers.
Rice
Adds body and a little starch to thicken the broth slightly.
Vermicelli
Adds a soft, starchy bite to the finished soup.

The step that matters

Skimming frequently while the broth comes to a boil. Foam and fat rise to the surface as the broth heats. Removing them keeps the broth clear and stops it tasting greasy or cloudy.

Swap the white pepper

How well each one fits the dish's main ingredients (chicken, rice, mace):

  1. Nutmegfits better
  2. Gingerfits better
  3. Cinnamonfits better
  4. White pepperthe original

Fit is the average pairing score against chicken, rice, mace. Candidates are from the same food group and used in at least 100 recipes.
