Roast Beef

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Preheat your oven to 400°F (200°C).

  2. If desired, have the butcher remove the bones and roll the meat for you.

  3. Salt the beef ribs generously.

  4. Place the beef on a roasting rack, ensuring it is not too close to the fire.

Roast

  1. Cover the beef with clean white paper to protect the fat while cooking.

  2. When the beef is nearly done, remove the paper and sprinkle flour over it.

  3. Roast until a rich, frothy appearance forms.

Serve

  1. Serve with potatoes and other vegetables, garnished with thin curls of scraped horseradish.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Beef ribs
Form the main body of the dish, with fat that renders and flavours the meat as it roasts.
Flour
Sprinkled near the end of roasting to help the surface brown and form a light crust.
Horseradish
Adds a sharp, pungent bite that cuts through the richness of the roasted beef.

The step that matters

Covering the beef with white paper. The paper shields the fat from direct heat so it does not burn while the meat cooks. Removing it near the end lets the surface brown and set.

Swap the horseradish

How well each one fits the dish's main ingredients (beef, flour, potato):

  1. Chivefits better
  2. Leekfits better
  3. Onionfits better

Fit is the average pairing score against beef, flour, potato. Candidates are from the same food group and used in at least 100 recipes.
