What each ingredient does

Mutton kidneys
Form the main body of the dish, cooking to a tender, savoury texture over direct heat.
Butter
Adds richness and moisture as it melts inside the kidneys during cooking.
Lemon juice
Adds bright acidity that balances the richness of the kidney and butter.

The step that matters

Turning the kidneys after four minutes. Turning at the right time lets the cut surface brown evenly and cook through without drying out. Kidneys cook quickly, so timing matters more than the exact heat.
