Ingredients

Directions

  1. Boil the goose giblets for a short time.

  2. Once cold, chop them into small pieces and slice the gizzard, heart, and liver.

  3. Stew the giblets in good stock for 15 minutes.

  4. Once cold, line a dish with veal cutlets or rump steaks.

  5. Add hard boiled eggs to the pie and season to taste.

  6. If making an imitation raised pie, thicken the giblets; if in a dish, garnish as desired.
