Ingredients

Directions

The book says “a quick oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Prepare

  1. Preheat the oven to 400°F (200°C).

  2. Prepare the rhubarb by cutting the large stalks where the leaves begin and stripping off the outer skin.

Assemble the pie

  1. Line a pie dish with pie crust, rolled thicker than a dollar coin.

  2. Place a layer of rhubarb in the dish, nearly an inch deep.

  3. Sprinkle the sugar, salt, and grated nutmeg over the rhubarb.

  4. Cover with another layer of pie crust, cut a slit in the center, and trim the edges.

Bake

  1. Bake until the pie loosens from the dish.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Rhubarb
Provides the main filling, its tartness and juice that cooks down into the pie.
Sugar
Adds sweetness that balances the sourness of the rhubarb.
Pie crust
Forms the shell and top layer that hold the filling in place while it bakes.
Nutmeg
Adds a warm, spiced aroma to the filling.

The step that matters

Cutting the slit in the top crust. Rhubarb releases a lot of liquid as it heats. The slit lets steam escape, so pressure does not build up and push filling out or leave the bottom crust soggy.

Swap the nutmeg

How well each one fits the dish's main ingredients (rhubarb, sugar):

  1. Cinnamonfits better
  2. Gingerfits about as well
  3. Nutmegthe original
  4. Capersfits less well

Fit is the average pairing score against rhubarb, sugar. Candidates are from the same food group and used in at least 100 recipes.
