Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Preheat the oven to 400°F (200°C).

  2. Line a tart pan with puff pastry.

Fill and bake

  1. Place raspberries in the pan and sprinkle with sugar.

  2. Cover with another layer of puff pastry and bake until golden.

  3. Remove the tart from the oven, take off the top, and pour in the cream mixture.

  4. Mix cream with egg yolks and a little sugar.

Finish

  1. Return the tart to the oven for 5 to 6 minutes.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Puff pastry
Forms the flaky, golden crust that encloses the fruit and custard.
Raspberries
Provide tart fruit flavour and moisture that softens the pastry base.
Sugar
Sweetens the raspberries and cream mixture and helps browning.
Cream
Adds richness and fat, giving a soft, smooth texture when set.
Egg yolks
Thicken the cream mixture as they set in the oven, giving a custard-like texture.

The step that matters

Pouring in the cream mixture. Egg yolks set with gentle heat. If the tart is over-baked before the cream goes in, or the custard is baked too long, it can curdle, turn grainy, or become rubbery.
