What each ingredient does

Puff pastry
Bakes into a flaky, crisp shell that holds the filling.
Oysters
Provide the main filling, with a tender texture and briny flavour.
Cream
Adds richness and a smooth, silky body to the simmered filling.
Oyster liquor
Adds savoury depth and moisture to the filling.

The step that matters

Simmer the oysters only briefly. Oysters toughen and shrink when overcooked, so a few gentle minutes in the cream keeps them tender while the flavours blend.

Swap the white pepper

How well each one fits the dish's main ingredients (bread, oyster, nutmeg, lemon, cream):

  1. Marjoramfits better
