Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Hard-boiled eggs
Form the core of the dish, staying firm inside the coating.
Raw forcemeat
Forms a raw meat layer that cooks through and holds the coating in place around the egg.
Grated tongue or ham
Adds a savory meaty outer layer and helps the coating grip the forcemeat.
Very fine bread crumbs
Create a crisp, golden browned crust when fried.

The step that matters

Fry the eggs in hot oil until they are a fine yellow color. Frying browns the crumb coating through the Maillard reaction and crisps the crust. The forcemeat must cook through to a safe internal temperature, so the oil should be hot enough to brown the outside without the coating burning before the centre is done.

Swap the parsley

How well each one fits the dish's main ingredients (egg, ham, bread, sauce):

  1. Capersfits better
  2. Nutmegfits about as well
  3. Parsleythe original
  4. Tarragonfits about as well

Fit is the average pairing score against egg, ham, bread, sauce. Candidates are from the same food group and used in at least 100 recipes.
