Make the jelly

  1. Add 1 pound of white sugar for each pint of liquid.

What each ingredient does

Tart apples
Provide the pectin and acid that allow the liquid to set into a jelly.
White sugar
Adds sweetness and, with the cooked juice, helps the mixture thicken and set.

The step that matters

Boil slowly until it thickens into a jelly. Pectin sets only when enough sugar and acid are present and the liquid reaches the right concentration. Boiling too hard or too briefly can leave the jelly runny or cause it to scorch and darken.

Swap the cranberry

The recipe marks cranberry as optional. How well each one fits the dish's main ingredients (apple, sugar, saffron, spinach):

  1. Lemonfits better
  2. Apricotfits about as well
  3. Orangefits about as well
  4. Cranberrythe original

Fit is the average pairing score against apple, sugar, saffron, spinach. Candidates are from the same food group and used in at least 100 recipes.
