Mushroom Ketchup

Ingredients

Directions

  1. Break the mushrooms into small pieces and place them in an earthen pan.

  2. Sprinkle salt over the mushrooms and let them sit for several days, mixing daily.

  3. After a week, do not stir until a thick scum rises on top.

  4. Strain the liquid from the mushrooms.

  5. Boil the liquid with peppercorns, mace, ginger, cloves, and mustard seed in a muslin bag.

  6. Once cooled, bottle the liquid with the spices still in it and seal tightly.

  7. After three months, boil the mixture again, then cool and bottle it.
