Ingredients

Directions

The book says “a hot oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Make the filling

  1. Blend the almonds to a paste with the egg whites.

  2. Mix in the powdered sugar and cream.

Assemble and bake

  1. Cut the puff pastry into small squares.

  2. Place a portion of the almond mixture on each square.

  3. Moisten the edges and cover with another piece of puff pastry.

  4. Prick the tops and bake in a hot oven at 400°F (200°C) until done.

  5. Ice with sugar after baking.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Blanched almonds
Provide the main almond filling, giving body, flavour and a moist, tender interior.
Egg whites
Bind the ground almonds into a smooth paste that holds together when baked.
Powdered sugar
Sweetens the filling and blends smoothly into the almond paste for a fine texture.
Cream
Adds moisture and richness, keeping the almond filling soft rather than dry.
Puff pastry
Forms the flaky, layered outer shell that rises and browns in the oven.

The step that matters

Moisten the edges before covering. Wet pastry edges seal the two layers together; dry edges can leave gaps, so the filling may leak or the cake may open during baking as the pastry puffs.

Swap the almond

How well each one fits the dish's main ingredients (egg, sugar, cream):

  1. Almondthe original
  2. Pistachiofits about as well
  3. Chestnutfits less well
  4. Pecansfits less well

Fit is the average pairing score against egg, sugar, cream. Candidates are from the same food group and used in at least 100 recipes.
