Home Made Wines
Ingredients
Directions
Mix fruit, sugar, vegetable extract, malic acid, and water in a suitable container.
Allow fermentation to begin, which will take about a day.
Monitor the fermentation; do not let it continue too long or stop it too early.
For sweet wine, keep the cask open until fermentation noise almost ceases.
For dry wine, prepare a barrel treated with sulfur fumes and transfer the wine into it.
Rack off the wine, clarify it with isinglass, and bottle it after about ten weeks.
