What each ingredient does

Grapes
Supply the juice, natural sugars and wild yeasts that drive fermentation and give the wine its flavor.
Sugar
Feeds the yeast, which converts it into alcohol and carbon dioxide.

The step that matters

Do not seal the vessel too early. Fermentation releases carbon dioxide gas. While the mixture still hisses, the gas needs to escape. Sealing too soon traps the gas and builds pressure that can burst the container.
