What each ingredient does

Molasses
Provides the sugar that the yeast ferments, and the dark color and rich flavor of the beer.
Yeast
Consumes the sugars and produces alcohol and carbon dioxide, making the beer fizzy.
Ginger
Adds a spicy, aromatic flavor to the beer.

The step that matters

Let the mixture cool before adding yeast. Yeast is killed or stressed by very hot liquid, so the wort must cool well before the yeast goes in to ferment properly.
