To Preserve Carrots, Parsnips, and Beets, All Winter

Ingredients

Directions

  1. Before frost, harvest beets or parsnips from the ground.

  2. Place them in a house, burying their roots in sand up to the neck of the plant.

  3. Arrange them in a shelving position, layering sand and beets alternately.

  4. Continue this method until all are stored.

  5. When needed, pull them from the top, not from the middle or sides.
