What each ingredient does

Clams
Provide the main seafood flavor and the chewy bite of the chowder.
Potatoes
Break down partly during boiling to thicken the broth and give body.
Pork
Fat rendered from the frying adds savory richness to the broth.
Tomato juice
Adds acidity and a subtle sweet tang that balances the rich broth.
Onion
Adds aromatic sweetness and depth to the broth.

The step that matters

Maintaining the water level during the boil. Potatoes and onion must simmer in a steady volume of liquid; if the water drops too low they can scorch and the broth loses body and flavor concentration. Topping up keeps the base consistent before the clams go in.

Swap the tomato

How well each one fits the dish's main ingredients (clam, pork, potato, onion, pepper):

  1. Capsicumfits better
  2. Tomatothe original
  3. Carrotfits about as well
  4. Chivefits about as well

Fit is the average pairing score against clam, pork, potato, onion, pepper. Candidates are from the same food group and used in at least 100 recipes.
