Stewed Rabbit with Dumpling

Ingredients

Directions

  1. Cut the rabbit down the back and trim the thin part of the ribs.

  2. Cut the rabbit into three or four portions on each side.

  3. Soak the rabbit in cold water for about an hour.

  4. Boil the rabbit in enough water to cover it for two hours or until the water is half gone.

  5. Dice the pork and fry it without browning, then add the minced onion.

  6. When the onion begins to change color, add it to the kettle with the rabbit.

  7. Season and thicken the stew with a spoonful of flour.
