Ingredients

Directions

The book says “a slow oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

  1. Preheat the oven to 350°F (175°C).

  2. Stuff the goose with the dressing until full and plump.

  3. Cover the goose with a sheet of buttered paper.

  4. Turn the goose over three or four times and baste frequently.

  5. Bake for three-fourths of an hour longer when stuffed.

  6. Serve with unsweetened apple sauce, cranberry, or currant jelly.
