Ingredients

Directions

The book says “a hot oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

  1. Roll out a thin sheet of puff pastry and cut it into rounds the size of a saucer.

  2. Place a spoonful of dried stewed apples in the center of each round.

  3. Fold the pastry over, press the edges together, and crimp with your thumb and finger.

  4. Brush the turnovers with a mixture of beaten egg and water.

  5. Dredge granulated sugar on top.

  6. Bake in a 400°F (200°C) oven until crisp and golden.
