What each ingredient does

Coffee
Supplies the flavor and aroma compounds that the water extracts from the grounds.
Boiling water
Acts as the solvent that pulls flavor out of the coffee grounds.

The step that matters

Do not let the coffee boil. Water that is too hot extracts bitter compounds quickly, and over-extracted grounds make the brew harsh and cloudy. Keeping the coffee below a boil helps it stay clear and balanced.
