Why it works: Peach and red currant work together. They rank in the top 8% of all ingredient pairs, and cooks put them together in 33 recipes. Both carry isoamyl acetate, which smells banana, pear. The science ↓
Peach Ice
Ingredients
Directions
Prepare the peaches
Cut half of the peaches into pieces the size of cherries.
In a saucepan, combine water, sugar, chopped peach kernels, and the other half of the peaches; boil for a few minutes.
Make the mixture
Mash the peaches with the back of a spoon, then stir in the currant jelly.
Remove the kernels and strain the mixture into a freezer.
Freeze and serve
Freeze the mixture, adding the beaten egg whites when it is almost frozen, along with the cut-up peaches.
Serve plain or with vanilla ice cream in individual dishes, with peach ice piled in the center.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs
What each ingredient does
- Ripe peaches
- Provide the main fruit flavour, sweetness and moisture that freeze into the ice.
- Sugar
- Adds sweetness and lowers the freezing point, keeping the ice softer and scoopable.
- Egg whites
- Trap air when beaten and folded in, giving the ice a lighter, less dense texture.
- Red currant jelly
- Adds tart fruit flavour and body to the peach base.
The step that matters
Adding the egg whites when almost frozen. If the whites go in too early they dilute the mixture, and if the ice is fully solid they cannot be worked in evenly. Adding them at a near-frozen, slushy stage lets them whip into the mixture and trap air, keeping the texture light.
Swap the red currant
How well each one fits the dish's main ingredients (peach, sugar, coffee, egg):
- Vanillafits better
- Figfits better
- Apricotfits better
- Red currantthe original
Fit is the average pairing score against peach, sugar, coffee, egg. Candidates are from the same food group and used in at least 100 recipes.
