Cream Fruit Rolls

Oven, in the book's wordsA hot oven

Ingredients

Directions

The book says “a hot oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Make the dough

  1. Sift together the flour, salt, and baking powder.

  2. Add the butter and rub it in with your fingertips.

  3. Stir in the cream to form a soft dough.

  4. Turn the dough onto a lightly floured surface and pat it to a thickness of ⅓ inch.

Shape the rolls

  1. Cut with a biscuit cutter, place half a stoned date on one half of each biscuit.

  2. Brush the edges with milk and fold over like Parker House rolls.

  3. Press the edges together, brush the tops with milk, and place half a date on top of each roll.

Bake

  1. Bake on a buttered baking sheet at 400°F (200°C) for 15 minutes.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Pastry flour
Provides the structure that holds the soft dough together once baked.
Baking powder
Releases gas in the dough, helping the rolls rise and become light.
Butter
Adds fat that tenderises the dough and gives a richer flavour.
Cream
Adds moisture and fat, binding the flour into a soft, tender dough.

The step that matters

Pat the dough to an even ⅓ inch thickness. Uneven thickness makes some rolls bake faster and dry out while others stay doughy. A consistent thickness lets the rolls rise and cook evenly.

Swap the dates

How well each one fits the dish's main ingredients (flour, butter, cream, milk):

  1. Vanillafits better
  2. Raisinfits better
  3. Coconutfits better
  4. Datesthe original

Fit is the average pairing score against flour, butter, cream, milk. Candidates are from the same food group and used in at least 100 recipes.
